Maple Dijon Chicken Thighs
Probably one of my favorite ways to eat chicken thighs! Super simple and made with minimal ingredients. The sauce is amazing.. feel free to double so you can spoon over rice or veggies.The original recipe was titled "man pleasing chicken" which I think is so funny. My mom has been making this for years and it's what made me like chicken thighs after never really caring for them.Boneless skinless chicken thighs... maple syrup... dijon mustard... rice wine vinegar (and fresh rosemary if you know what's good for you). That's it! Winner winner chicken dinner!!Not much to say other than I love this recipe for meal prepping or for quick dinners. It's a great staple to have in your recipe book. I hope you enjoy it!!
Maple Dijon Chicken Thighs
Chicken thighs baked in a maple dijon sauce.
1 1/2 lbs boneless skinless chicken thighs
1/4 cup maple syrup
1/2 cup dijon mustard
1 tbsp rice wine vinegar
plenty of fresh rosemary
Preheat oven to 450 degrees. Spray a baking dish with non stick spray or line with aluminum foil.
Lay the chicken thighs in the bottom of the dish and season both sides with salt and pepper.
Mix together the maple syrup, mustard and vinegar. Pour over the chicken and flip the chicken around to coat evenly. Bake for 40 minutes. Garnish with fresh rosemary.
