Chicken Tostadas
These easy chicken tostadas are made with juicy shredded chicken breast cooked in the crockpot served on top of crunchy tostadas and piled high with toppings. One of my favorite at home Mexican meals!Tostadas are so underrated to me. I never see people make them, but my mom has been making them for us for years. I thought of them the other day and called her up to see how she used to make hers. I was so surprised when she told me all she did was cook chicken in store bought salsa. I remember it being so flavorful I thought it would be way more complex lol.So, I just love this recipe because the chicken could not be easier. Just throw some of your favorite salsa and a couple chicken breasts in the crockpot. That's all the cooking you have to do!In a few hours, perfectly cooked juicy and flavored chicken will be ready for you to build your tostadas.The best part of any Mexican dish are the toppings though. Plenty of fresh cilantro, shredded lettuce, cheese, sour cream, red onion, avocado and lime. Did I forget anything?And yes these look messy. But the messier the tastier, right?! Basically, I layered my tostadas starting with a tostada and chicken and then another tostadas, chicken and all of the toppings. Chicken Tostados
Juicy crockpot chicken cooked in salsa and layered on tostados with toppings.
1 lb chicken breast
1 jar regular sized salsa of choice
1 package of corn tostadas
shredded lettuce
diced red onion
shredded cheese
fresh chopped cilantro
fresh lime juice
greek yogurt or sour cream
Place the chicken in a crockpot set to low. Pour the salsa over the chicken, cover and let cook for 3-4 hours (may turn it up to high for the last hour to finish cooking quicker). Shred the cooked chicken and let sit in the crockpot for 20-30 minutes.
Build your tostadas. Place shredded chicken on top of tostadas and top with lettuce, cheese, red onion, cilantro, lime juice and greek yogurt.
