Hot Chocolate Cookies
Hot chocolate cookies?? Sign me up! I'm a chocolate lover and these are full of chocolatey goodness and a perfectly toasted marshmallow. These hot chocolate cookies are so fun for the wintertime!
How to make hot chocolate cookies:
Start with the ingredients pictured above
all purpose flour
unsweetened cocoa powder
softened butter
vanilla
eggs
brown sugar
baking soda
chocolate chips
marshmallows!
Then it goes just like every cookie recipe. Cream the butter and the sugar together. Beat in the eggs and vanilla. Add the dry ingredients into the wet, mix until combined. Then mix in the chocolate chips.
Form about a 1.5-2 inch ball of dough into a ball. The dough will be sticky, that’s okay. Place the dough balls on the baking sheet. Cut a large marshmallow in half and stick it in the middle of the cookie, cut side down. You could use mini marshmallows and stick them on the tops, but the marshmallows melt and may run all over the edges of the cookie and get stuck to the pan. One in the middle is less messy and more appealing to me! Up to you and how you want your marshmallows.
I fit six cookies per tray. They will spread out a good amount, so don’t overcrowd your sheet. The cookie will bake while the marshmallow gets all toasty!

Hot Chocolate Cookies
1 stick softened butter
1 3/4 cup packed brown sugar
2 eggs
1 tsp vanilla
2 cups flour
1/2 cup cocoa powder
1 tsp baking soda
1 1/2 cups chocolate chips
9 regular marshmallows
Preheat oven to 350 degrees. Line a baking sheet with parchment paper. With an electric mixer, cream together the butter and brown sugar for 3 minutes on medium high speed. Add the egg and vanilla and mix until combined.
In a separate bowl, mix the flour, cocoa powder and baking soda together. Add the dry ingredients to the wet ingredients and mix until a dough forms. Mix in the chocolate chips.
Cut the marshmallows in half with scissors or a knife. With a spoon, scoop out cookie dough and roughly roll into a 2 inch ball. Gently push half a marshmallow into the center of each cookie. Bake for 12 minutes and remove from the oven. Wait 1-2 minutes and then transfer to a cooling rack.
