Banana Pancakes
Upgrade your weekend pancakes with these banana pancakes made with melted peanut butter, walnuts and chocolate.These pancakes are super simple to whip up and result in a light and fluffy banana flavored pancake! The best part are the the toppings though. Melted peanut butter and chocolate are mandatory! I simply put chocolate chips in a bowl with a little coconut oil, microwave for 30 seconds and stir, then microwave for another 30 seconds. Stir until melted. Peanut butter will melt great by itself for a minute in the microwave. You can add coconut oil if it needs help melting.I used coconut sugar, almond milk and coconut oil for this recipe. The other ingredients you should have on hand, so if you happen to not have those three go ahead and use brown or white sugar, butter or another oil, and any milk. I love the addition of walnuts in these pancakes, but again if you don't have any throw in whatever nuts you do have or skip them!This is a great banana pancake recipe everyone will love. Banana Pancakes
Fluffy pancakes made with mashed bananas, chocolate and walnuts.
2 ripe bananas
1 cup milk
1 egg
1 tsp vanilla
2 tbsp melted coconut oil (or butter)
1 tbsp coconut sugar (or brown sugar)
3 1/2 tsp baking powder
1 1/2 cup flour
1/2 cup chocolate chips
1/2 cup crushed walnuts
With a fork, mash the bananas. Mix in the milk, egg, vanilla, coconut oil and sugar.
Mix in the flour and baking powder. Mix in the chocolate chips and walnuts.
Heat a pan over low-medium heat and spray with non stick spray. Use a 1/4 cup measure and pour the batter into the pan. Flip when the sides of the pancake are bubbling. Once the pancake is cooked, remove from pan.
Melt some peanut butter in the microwave for one minute. Melt chocolate chips with a little coconut oil for one minute, stirring halfway through. Stir until completely melted and drizzle both over pancakes.
