Creamy Three Cheese Grits

Where are all my grit lovers at? They are filling, comforting, versatile and a southern staple. I loved grits as a kid, especially cheese grits, but often forget about them! So, I wanted to create a basic yet slightly elevated cheese grit recipe I can turn to for weekend breakfast. Whether you like them sweet or savory (team savory), you will love these creamy three cheese grits. Served with a runny fried egg and some bacon, this is a breakfast worth waking up for.

This recipe for creamy three cheese grits has three kinds of cheeses: smoked gouda, extra sharp white cheddar and a little cream cheese! I chose smoked gouda because I love the mildness of gouda with some smokey flavor. The extra sharp white cheddar gives the dish that really cheesy sharp flavor and saltines. The little bit of cream cheese is used for for the creaminess! It’s a must! Of course, you can use any three cheese you want or have in your fridge like any type of cheddar (yellow or white), American cheese, or even goat cheese! Grits are great like that because you can customize them so easily. Served with a runny fried egg and some bacon, this is a breakfast worth waking up for.

How to make creamy three cheese grits

We are using a basic grits recipe for this! No chicken broth, garlic or other nonsense added to the grits. You will bring water and milk to a low boil. Be extra careful when boiling milk because if you aren’t watching it can boil over and scald which will ruin it. So, once the liquids just start bubbling, stir in your grits and let them cook.

While the grits are cooking, grate your cheeses. I used smoked gouda and extra sharp white cheddar, but feel free to add whatever cheeses you would like! You can also fry up your eggs and bacon while they cook. Once the grits are finished cooking, stir in the grated cheeses and the cream cheese. Throw in the butter, which adds more silkiness and richness. Check for seasonings, add salt and plenty of freshly ground black pepper.

  • Southwestern: salsa, crispy potatoes, eggs & bacon

  • Loaded: bacon, green onions & extra cheddar cheese

Creamy Three Cheese Grits

  • 1 cup old fashioned grits

  • 2 cups milk

  • 2 cups water

  • 1 tsp salt

  • 1 1/2 cup smoked gouda cheese, grated

  • 1 cup extra sharp white cheddar cheese, grated

  • 2 tbsp cream cheese

  • 4 tbsp butter

  • 1 tsp freshly ground black pepper

  1. Bring the milk, water and salt to a low boil in a large pot. Once the liquid just begins to bubble, stir in the grits. Bring to a simmer, cover and cook according to the box instructions (20-25 minutes most likely). Stir periodically throughout.

  2. Once the grits have cooked, remove from heat and add all three cheeses, butter and black pepper. Stir until everything is melted and combined. Check for seasonings.
