Superica Salad

For all my Atlanta natives who have ever been to Superica, here is that amazing salad they make! It’s full of avocado, corn, pepper jack cheese, pickled onions and a creamy oregano dressing. A great salad to serve with tacos, enchiladas or just add some meat on top!

Superica is a well known and popular Tex Mex with multiple locations throughout the Atlanta area. They have a house salad that is to die for with an amazing creamy oregano dressing. The combination of avocado, corn and the pickled onions with the oregano dressing make this salad so delicious with that Tex Mex flavor.

What you need

Lettuce- any greens you want! Romaine or mixed greens work great.

Pickled Onions- These are so easy to make and make a lot to keep in the fridge. You’ll just need a red onion, vinegar and sugar. They go great on salads and sandwiches.

Avocado

Shredded pepper jack or queso fresco

Corn- I use the frozen roasted corn from Trader Joe’s. I just put some in a bowl of warm water to defrost. Really easy!

Creamy oregano dressing- The best dressing. A simple creamy buttermilk based dressing with oregano and vinegar.

Cilantro

Cucumber or radishes- Not mandatory, but some extra add in options!

This salad starts out like most salads do with a bed of lettuce. Whatever greens you’re feeling throw em in a bowl! Slice the red onion very thin. Heat vinegar, sugar and a little salt over medium heat in a saucepan, then add the red onions and turn the heat off. The red onions will just sit in the liquid for 10-15 minutes while you get everything else ready. Dice up your avocado, defrost your corn and shred your cheese.

The dressing is a combination of buttermilk and mayonnaise for the base. Garlic, salt, pepper and little mustard will also go in this dressing. The best part thought is the oregano! You will mix the oregano with a little red wine vinegar and microwave it for 30 seconds. This will help the oregano oil bloom and intensify the flavor.

When everything is ready, throw it all together and toss! It’s the perfect salad to serve with mexican dishes or it would be delicious with grilled chicken, steak or shrimp on top. So good for healthy eating. I hope you all love this recipe!

Superica Salad with Creamy Oregano Dressing

  • 7 oz. green leaf lettuce OR any greens of your choice

  • 1 avocado, diced

  • 1/2 cup frozen corn, defrosted

  • 1/2 cup shredded pepper jack cheese or queso fresco

  • 1/4 cup cilantro, chopped

    Pickled Onions

  • 1 small red onion, sliced thinly

  • 1 cup white vinegar

  • 1/2 cup water

  • 3 tbsp sugar

  • 1 tsp salt

    Creamy Oregano Dressing

  • 1 1/2 tsp dried oregano

  • 1 tbsp red wine vinegar

  • 1/2 cup buttermilk

  • 1/2 cup mayonnaise

  • 1 1/2 tsp dijon mustard

  • 1 small garlic clove, grated

  • 3/4 tsp salt

  • 1/4 tsp black pepper

  1. For the pickled onions: Add the vinegar, sugar and salt in a small saucepan over medium heat. Stir until the sugar dissolves and turn off the heat. Add the red onions and make sure they are all submerged. Let sit for 15 minutes. Store pickled onions in a mason jar and use as many as you want for this salad.

  2. For the dressing: Mix together the oregano and red wine vinegar in a small bowl. Microwave for 30 seconds, remove and let cool. Whisk together the buttermilk, mayonnaise, mustard, garlic, salt, pepper and oregano mixture.

  3. In a large bowl, add the greens, avocado, pickled onions, corn, cilantro and cheese. Toss with the creamy oregano dressing. Taste for salt and pepper.
