These chocolate sugar cookie ice cream sandwiches are two chewy and chocolatey sugar cookies filled with vanilla ice cream and mini chocolate chips. Sooo good and fun to make with endless ice cream flavors and toppings to choose from.I have to admit I don't like sugar cookies. I'm a chocolate person, so I would much rather have chocolate chip cookies over sugar. I also just don't love how sweet and buttery tasting they can be, but when I saw chocolate sugar cookies I knew I had to try them.I made the chocolate sugar cookies and they were great! They were definitely missing something though.. I loved the texture so I thought they were still a winner. Soft and very chewy and good chocolate flavor. I got to brainstorming and ice cream cookie sandwiches came to mind! Because the cookies aren't overly sweet I thought ice cream would pair perfectly. I love the chocolate chips to add texture.So you will make the chocolate sugar cookies, let them cool and let some ice cream thaw and then build the cookie sandwich! And if you like the cookies on their own like me, you will have cookies and some ice cream cookie sandwiches in the freezer.I used a dairy free vanilla cashew milk ice cream (love dairy free ice creams!) and mini chocolate chips. You could do mint or chocolate ice cream and toppings like crushed peanuts, coconut flakes or even mini M&Ms! Chocolate Sugar Cookie Ice Cream Sandwiches

Ice cream and toppings sandwiched between two chewy chocolate sugar cookies.

For the cookies

  • 1 cup softened butter

  • 1 1/2 cup packed brown sugar

  • 2 eggs

  • 1 tsp vanilla

  • 3/4 cup cocoa powder (scoop and level )

  • 2 cups all purpose flour (scoop and level )

  • 1 tsp baking soda

  • 1 tsp salt

  • 1/2 cup sugar for rolling

For the sandwiches

  • 1 container of your favorite ice cream

  • your favorite toppings

  1. Preheat an oven to 350 degrees and line a baking sheet with parchment paper. With an electric mixer, beat together the butter and sugar until fluffy, 3-5 minutes.

  2. Beat in the eggs and then the vanilla. Whisk together the cocoa powder, flour, baking soda and salt. Add the dry ingredients to the butter mixture and mix until incorporated.

  3. Creat 1-2 tbsp sized balls of dough and roll in the sugar. Place on the baking sheet and bake for 8-10 minutes. Transfer the cookies to a wire cooling rack and let cool completely, about 10 minutes.

  4. While the cookies are cooling, take the ice cream out of the freezer to thaw (you dont want it to be liquidy just easy to handle). Spread a generous amount of ice cream on a cookie and place another cookie on top. Smooth the edges out and add more ice cream to the edges if needed. Roll the ice cream sides in the toppings. Place the ice cream sandwiches on a plate or baking sheet and put in the freezer to harden, 20-30 minutes.
