Chicken and Rice Soup

This chicken and rice soup is full of shredded chicken, rice, carrots, celery and lemon. It's light and bright and the perfect soup for the springtime!Who says you can't have soup when it starts to warm up? This chicken and rice soup the perfect warmer weather spring time soup because of all the fresh lemon and dill in it. It's not super thick or hearty like a lot of soups and there's no dairy involved. Just chicken, rice and veggies in a lemony chicken broth!The ingredients are minimal for this one and it takes about 20 minutes to whip up. It's a great soup to have for lunch or dinner with a salad or bread.

What you need:

  • Cooked shredded chicken: Cook 1-2 chicken breasts and shred them. The easiest way I think to cook chicken breast is to rub them down with salt, pepper and olive oil and bake at 425 for 20-25 minutes. This is a great way to make chicken to use throughout the week for a variety of uses.

  • Pre cooked rice: I made the rice separately and added about a cup into the soup.

  • Chicken stock: About 6 cups of chicken stock should be used in this recipe. If you don't have enough you can supplement with water just make sure you add extra salt/pepper.

  • Veggies: Diced carrot, celery and onion.

  • Lemon and dill: The light and bright flavors from the lemon and dill go perfect together!

A few things

  • The liquid can be changed. I think the soup needs at least 5 cups of liquid because the rice will continue to soak up the liquid even as it sits in the fridge. I say 5-6 because some people like their soup more brothy than others. You can eyeball the liquid amount to your liking!

  • Add extra veggies/omit the chicken if you want! Spinach, baby kale or cauliflower rice would be great added veggies.

  • You can use other herbs besides dill. I used dill because I rarely get to use it and saw someone else add it to their soup! Parsley or even cilantro would be good in place of dill.

Chicken and Rice Soup

Shredded chicken, rice, carrots, celery and fresh lemon in a chicken broth.

  • 1/2 onion, diced

  • 2 cloves garlic, minced

  • 1 cup diced carrot

  • 3/4 cup celery

  • 6 cups chicken stock (low sodium )

  • 1-2 chicken breast, cooked and shredded

  • 1 cup cooked rice

  • 1 lemon

  • 1-2 tsp fresh dill, chopped

  1. Heat olive oil over medium heat and add the onion. Cook for 2-3 minutes, then add the garlic, carrots and celery. Cook for 3-5 minutes until softend.

  2. Add the chicken stock, shredded chicken and rice. Stir everything together and bring to a simmer. Add in the juice of the lemon and fresh dill. Simmer for 5 minutes and enjoy.
