Say hello to my new favorite breakfast (or dinner)! Diced sweet potatoes are roasted with onion and then some eggs are cracked on the baking pan and it cooks all together in the oven. A one pan meal that's inexpensive, healthy and delicious!!I looove eggs and sweet potatoes. I don't usually think of sweet potatoes in a savory way, but the other night my dad roasted them up with savory seasonings and I loved them. So I had a few sweet potatoes on hand and was thinking of what to do with them.. I'm so happy this idea popped into my head! The eggs and potatoes are cooked perfectly together and it's such an easy meal to make and clean up!You can swap the sweet potatoes out for regular potatoes if you like. I used cilantro and grated Parmesan to top it all off at the end, but use whatever cheeses, herbs or toppings you want! Also, the eggs are cooked to your liking. Mine went for about 8 minutes and the yolks were perfect for me. You can use as many sweet potatoes and eggs as you can fit on the pan!

What you need:

  • sweet potatoes

  • an onion

  • eggs

  • fresh herbs

  • whatever seasoning you like!

I dice the onions and sweet potatoes into really small pieces so the potatoes cook quickly. I do a pretty simple seasoning, but this is where you can get creative with the spices you want! After 20 minutes in the oven, I crack some eggs on the sheet and bake until the yolk is cooked to my liking. When it comes out, I top it all with fresh cilantro (or parsley) and grated parmesan.I hope you all enjoy this sheet pan sweet potato hash and eggs! Happy Sunday!!

Sheet Pan Sweet Potato Hash and Eggs

Diced sweet potatoes and eggs baked in the oven.

  • 2-3 sweet potatoes, small diced

  • 1/2 onion, diced

  • 2 tbsp olive oil

  • 1 tsp salt

  • 1/2 tsp pepper

  • 1/2 tsp garlic powder

  • 4-6 eggs

  • fresh herbs

  • 1/4 cup grated Parmesan cheese

  1. Preheat the oven to 400 degrees. Place the diced sweet potatoes and onion on a baking sheet. Toss with the olive oil, salt, pepper and garlic powder. Bake for 10 minutes then take them out and move the potatoes around. Put back in the oven and bake for another 10 minutes.

  2. Push the sweet potatoes aside to create small areas to crack the eggs in. Pour extra olive oil in the areas to help the eggs from sticking. Crack the eggs in the holes and put back in the oven. Cook for 6-10 minutes until the yolks are cooked to your liking. Top with fresh herbs and parmesan. Salt and pepper as needed.
