Grilled Chicken Sandwich with Basil Aioli

Grilled Chicken Sandwich with Basil Aioli

Grilled chicken on top of toasted ciabatta with arugula, bacon and basil aioli.

  • 4 chicken breast

  • 5 cloves of garlic, minced

  • 1/3 cup olive oil

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/2 cup mayonnaise

  • 8 slices cooked bacon

  • 4 tbsp fresh basil, chopped

  • 1 tsp lemon juice

  • 4 slices of cheese (provolone or white cheddar )

  • arugula

  1. Combine the chicken, olive oil, salt, pepper and 4 cloves minced garlic into a bag or bowl and set aside to marinate. Best to let it sit for about 30 minutes.

  2. For the basil aioli, mix together the mayo, one clove minced garlic, lemon juice and chopped basil. Salt and pepper.

  3. Heat a grill pan over medium high heat with olive oil. Cook chicken breast for 4-5 minutes per side or until cooked through. While the chicken is cooking, slice the ciabatta in half and toast. Spread the basil aioli. Top each piece of chicken with a slice of cheese and put on the bread. Top with arugula and two slices of bacon.
