If you're eating strawberry shortcake with angel food cake, stop now and try this strawberry shortcake with sweet biscuits! Sweet, juicy strawberries piled up on sweet biscuits with homemade whipped cream make this the best summer dessert.My family is a sucker for strawberry shortcake. It's our all time favorite dessert in the summer and we get so excited when it's on the menu. Except we don't eat strawberry shortcake with angel food cake you see a lot, we eat ours with sweet biscuits! In fact, we never had strawberry shortcake with angel food cake growing up and I remember being so disappointed when I had it with angel food cake for the first time.The biscuits make all the difference. They are slightly sweetened easy to make drop biscuits that soak up all the juice from the strawberries. It's so yummy tasting and addicting. I could eat a million of these biscuits with the strawberries. Just don't forget that precious strawberry juice in the bottom of the strawberry bowl when you start building your strawberry shortcakes.

What you need:

  • Strawberries

  • Sugar

  • Bisquick mix

  • Butter

  • Milk

  • Heavy Whipping Cream

  • Vanilla

How to make it:

Start by slicing the strawberries and toss them in the sugar and vanilla. The strawberries will marinate and create the most amazing sweet strawberry syrup. Make sure you spoon some over your biscuits! Then you can make the drop biscuits and bake those. While the biscuits are baking, whip up the homemade whipped cream. Homemade whipped cream is so much better than store bought!! Then you can assemble!

You can wrap any leftover biscuits in tin foil or plastic wrap. Store leftover whipped cream and strawberries in air tight containers in the fridge for up to the next 1-2 days.

Strawberry Shortcake

Fluffy, sweet drop biscuits piled high with sweetened strawberries and homemade whipped cream.

For the strawberries

  • 4 cups sliced strawberries

  • 1 tsp vanilla

  • 1/3 cup sugar

For the biscuits

  • 3 cups Bisquick mix

  • 4 1/2 tbsp melted butter

  • 6 tbsp sugar

  • 3/4 cup milk

For the homemade whipped cream

  • 1 cup heavy cream

  • 1/2 tsp vanilla

  • 1 tbsp sugar

  1. Preheat an oven to 425 degrees.

  2. Combine the sliced strawberries, vanilla and sugar in a large bowl. Toss until all of the strawberries are covered. Set aside.

  3. In another bowl, mix the Biquick mix, melted butter, sugar and milk until combined. Do not overmix. Use an ice cream scoop or large spoon and drop dough onto a parchment lined baking sheet to make nine biscuits. Bake for 12-14 minutes until golden brown.

  4. While the biscuits are baking, add the heavy cream into another bowl. Using a hand mixer, mix on high speed for 3-4 minutes until stiff peaks are formed. Add the vanilla and sugar and mix.

  5. Slice open a biscuit and spoon strawberries and the strawberry juice at the bottom of the bowl over. Top with whipped cream.
