A simple shrimp and pasta dish bursting with flavor from garlic and fresh herbs. Shrimp and spaghetti aglio e olio has minimal ingredients, is made in under 20 minutes and is delicious! This recipe is the perfect busy night dinner.Aglio e olio is an Italian pasta dish made with olive oil, lots of garlic and pepper flakes. It's such a simple, but flavorful dish which I love because truly anyone can make this. As long as you have garlic and olive oil you're good to go!

What you need

  • Spaghetti

  • Shrimp: I used frozen ready to eat shrimp that was already peeled and deveined. I let it thaw right before I used it. In the original recipe and when I made it, the shrimp is supposed to be butterflied. However, shrimp cooks so quickly that I don't even think you need to butterfly it unless you buy jumbo size shrimp.

  • Garlic and red pepper flakes

  • Olive oil

  • Fresh herbs: I used lots of basil and parsley. Use whatever herbs you have!

  • Pasta water: Don't drain your pasta! When the shrimp is finished cooking, add some of the pasta water to the sauce and then use tongs to transfer the pasta to the pan. The pasta water helps thicken.

Shrimp and Spaghetti Aglio e Olio

Simple shrimp and pasta dish with garlic, olive oil and fresh herbs.

  • 1 lb spaghetti

  • 1 lb shrimp, peeled and deveined

  • 1/3 cup olive oil

  • 5-6 garlic cloves, minced

  • 1/2 tsp red pepper flakes

  • 1/4 cup fresh herbs (such as basil and parsley )

  • salt

  • fresh black pepper

  1. Add the pasta to salted and boiling water. Cook until al dente, about 2 minutes shy of being cooked all the way.

  2. While the pasta is cooking, add the olive oil to a large pan over medium heat. Add the garlic and red pepper flakes and cook for 2 minutes. Be careful not to burn the garlic, turn down the heat if necessary. Add the shrimp and cook for 2-3 minutes on one side. Salt and pepper. Flip and cook for 1-2 minutes on the other side until pink. Add 1/3 cup of pasta water to the pan. Using tongs, transfer the pasta from the pot into the pan and cook for 1-2 minutes to let the sauce thicken up. Finish with fresh herbs and olive oil drizzle.
