Chicken with Tomato Basil Pasta
A super simple yet delicious Italian meal! Sautéed chicken breast on top of pasta covered in a tomato basil sauce. Perfect next to a big fresh salad.
What you need
Spaghetti
Chicken breast
Cherry tomatoes
Fresh basil
Parmesan cheese
Mini mozzarella cheese balls
Dry white wine
Salt, pepper, garlic and olive oil
Chicken with Tomato Basil Pasta
Sautéed chicken breast over tomato basil pasta.
8 oz. spaghetti pasta
1 lb chicken breast, sliced in half
1 tbsp olive oil
2 tsp salt
1 tsp fresh black pepper
4 cups cherry tomatoes
1/2 cup dry white wine
1 clove of garlic, minced
1/2 cup fresh basil, chopped
2 oz. Parmesan cheese, grated
3 oz. mini mozzerella cheese balls
Bring a large pot of salted water to a boil. Cook the pasta according to the box instructions.
Meanwhile, in a large pan heat the olive oil over medium heat. Salt and pepper chicken with 1 tsp salt, 1 tsp black pepper. Cook for 2-3 minutes on each side until the chicken is cooked all the way through. Transfer the cooked chicken to a plate.
Turn the heat down to medium low. In the same pan, add the tomatoes and wine. Next, add the garlic, 1 tsp of salt and 1/4 cup of basil. Stir. The tomatoes will begin to blister and burst. Cook for 5 minutes until thickened. Stir in the Parmesan cheese and mozzarella balls. Add the chicken back into the sauce for 1-2 minutes to warm back up.
Garnish with the remaining fresh basil and a drizzle of olive oil.
