This roasted red pepper pasta is so easy with only a few ingredients blended up in a blender! It makes a super flavorful sauce that tastes like it's from your local Italian restaurant. You can make this delicious pasta dish in less than 20 minutes!This is possibly the easiest pasta dish (or any dish) I've made. I love this roasted red pepper pasta so much because it tastes amazing, but doesn't even require that many ingredients. Most of the flavor comes from the roasted red peppers that you can buy in a jar. I've never actually used them before, but this is definitely going to be a staple dinner for me.Not much to say about this recipe because its so straightforward, so I'll let you get to cooking! Roasted Red Pepper Pasta

Rigatoni pasta in a creamy roasted red pepper sauce

  • 1 lb rigatoni pasta

  • 12 oz. jar roasted red peppers, drained

  • 1 cup heavy cream

  • 1/2 cup chicken or vegetable stock

  • 2 garlic cloves

  • 5-6 large basil leaves

  • 1/4 tsp red pepper flakes

  • 1 tsp salt

  • 1/2 tsp pepper

  • 3/4 cup grated parmesan cheese

  1. Bring a pot of salted water to a boil. Add the rigatoni pasta and cook according to the box instructions.

  2. While the pasta is cooking, add the roasted red peppers, heavy cream, stock, garlic cloves, basil, red pepper flakes, salt and pepper into a blender. Blend to make a creamy sauce.

  3. Drain the pasta and leave it in the collander. Pour the red pepper sauce into the same pot that you cooked the pasta in. Bring the sauce to a simmer and add the pasta back in. Mix in the parmesan cheese. Serve with extra basil.
