Cobb Salad with Healthier Blue Cheese Dressing

Cobb salad with healthier blue cheese dressing is topped with the yummiest ingredients like bacon, egg and turkey. Add on whatever fresh vegetables you have and toss with my healthier blue cheese dressing for a delicious and filling salad.

Why I love cobb salads

I have been craving a Cobb salad! I haven't had one in ages and cobb salad randomly popped in my head the other day. I love salads that involve many different ingredients and yummy dressings because I feel like it's an easy way to eat a bunch of nutritious foods.Cobb salads traditionally include bacon, hard boiled eggs and a meat like chicken, turkey or ham. They also include blue cheese, red or green onion, avocado and other vegetables. The dressing can be what you want, I used a healthier blue cheese dressing. You can make your own or use your favorite bottled dressing. If you don't like blue cheese, ranch or a simple vinaigrette would be great.I love cobb salads because I think they are really customizable to what you have in your fridge and just what you like in general. You can switch them up with different proteins, vegetables and dressings. Cobb salads are very filling and I love that they are comprised of all veggies and a lot of protein. If you include avocado, it will add healthy fats.

What I have in my cobb salad

  • Greens: I used a mix of chopped green leaf lettuce and kale. You can use mixed greens, kale or romaine.

  • Cooked Bacon: You can use turkey bacon.

  • Turkey breast: I used sliced turkey breast, but other great options would be sliced ham or chopped chicken. Leftover chicken would be great.

  • Hard boiled egg

  • Veggies: I used cucumbers and cherry tomatoes in mine. Avocado is a very popular topping for cobb salads, too. You can use whatever veggies you have!

  • Red onion: You can use red onion, green onion or chives.

  • Blue cheese: If you don't like blue cheese, you can use your favorite shredded cheese like cheddar.

  • Healthier blue cheese dressing: I made my own with greek yogurt and avocado oil mayonnaise. You can use ranch or a vinaigrette in place of blue cheese dressing.

As you can see, this Cobb salad with a healthier blue cheese dressing is a mix of various salad toppings to make a hearty delicious salad. Customize to your liking and switch it up every time. Next time I'm for sure going to put avocado on mine! Hope you guys enjoy this classic salad!

To store Cobb salad

This salad makes enough for about 4 large servings or 6 small side servings. It's a pretty big salad. If you are making for the week and want to eat on different days, just don't mix the dressing until you are about to eat. You don't want the greens to get gross sitting in the dressing.

Cobb Salad with a Healthier Blue Cheese Dressing

Mixed greens topped with bacon, turkey, egg and vegetables tossed in a healthier blue cheese dressing.

  • 5-6 cups mixed greens or lettuce

Salad Toppings

  • 6 strips of cooked bacon, chopped

  • 3-4 hard boiled eggs, chopped

  • 6 slices of turkey breast, chopped

  • 1/2 of a cucumber, diced

  • 1/2 cup baby tomatoes, diced

  • 1/4 cup red onion, thinly sliced

  • 1/2 cup cheese, such as blue or cheddar

For the blue cheese dressing

  • 1/3 cup crumbled blue cheese

  • 1/4 cup milk

  • 1/2 cup avocado oil mayonnaise

  • 1/4 cup greek yogurt

  • dash of Worcestershire suace

  • salt and pepper

  1. In a large bowl, assemble the ingredients for the salad. Place the mixed greens and lettuce on the bottom and the salad toppings on top.

  2. In a small bowl, whisk together the ingredients for the dressing.

  3. Toss the dressing into the salad or store the dressing and salad seperately.
