Italian Sausage Tortellini Soup

One of my all time favorite soups on this blog! A recipe from my mom, tried and true, absolutely delicious. Italian sausage tortellini soup has a comforting, robust flavor and is filled with carrots, zucchini, sausage, cheese tortellini and a splash of red wine. It’s the perfect bowl of comfort food to serve for yourself or others.

This soup feels so homey and nostalgic to me and as soon as it gets cold I start craving it. I love serving this soup with pieces of crusty bread or you can serve a simple salad alongside. Perfect to eat on its own as well and with a glass of wine.

Note: you can use sweet, Italian or spicy sausage for this recipe. I have even used chicken sausage before and it's great. If it is not loose sausage already, just be sure to remove the casings with a knife.

Also, this is a perfect time to use parmesan rinds! Next time you use all of your parmesan, save the rind in the freezer and toss it in this soup. It will deepen the flavor and give a rich salty and nutty flavor! So good!

Italian Sausage Tortellini Soup

Soup filled with veggies, sausage, tortellini, and Italian flavors.

  • 10-12 oz. sweet or Italian sausage (casings removed if necessary )

  • 1 large onion, diced

  • 4 garlic cloves, minced

  • 1 carrot, thinly sliced into coins

  • 4 cups beef stock

  • 1/2 cup red wine

  • 1 cup water

  • 8 oz can tomato sauce

  • 14.5 oz can diced tomatoes

  • 1/2 tsp dried oregano

  • 1 zucchini. thinly sliced

  • 1 8 oz. container of cheese tortellini

  1. Brown the sausage in a pan until fully cooked. Remove from heat.

  2. In a large pot, heat 2 tbsp of olive oil over medium-high heat. Add the onions, carrots, and garlic. Cook for 5 minutes until soft and fragrant. Add the beef stock, wine, water, tomatoes, tomato sauce, sausage and oregano. Let simmer for 30 minutes uncovered.

  3. Add the zucchini and simmer for 20 more minutes. Add the tortellini and simmer for the last 10 minutes. Serve with plenty of fresh parsley or basil, parmesan cheese, and crusty bread.
