Traditional comforting french toast lightened up with healthier ingredients.
I'll admit, I'm not the biggest fan of french toast and I never really have been. My boyfriend on the other hand loves it, so I find myself making it frequently. This recipe creates slightly crispy on the outside and fluffy on the inside traditional french toast, but a little bit healthier.
I use almond milk instead of whole milk or buttermilk, egg whites instead of whole eggs, and coconut sugar as the sweetener. As a result, french toast with less calories, sugar, and fat so you don't have to feel TOO guilty indulging your sweet tooth in the am.
Two things to note:
You'll want to use a thick bread slice. I use soft sourdough sliced bread or thick hearty varieties of sliced bread. This is so the bread does not absorb too much liquid and become soggy or too eggy.
Cinnamon is the key here. I put lots of cinnamon which is why I think it tastes so good. However, each bread slice you dip in the liquid will absorb almost all of the cinnamon, so you will need to add more cinnamon for every slice of bread you use.
Healthier French Toast
Light and fluffy french toast lightened up with some healthier ingredients.
4 slices bread
2 egg whites
1 cup almond milk
1 tsp vanilla
2 tbsp coconut sugar
2 tsp cinnamon
Whisk together the egg whites, almond milk, vanilla, oil, coconut sugar, and cinnamon in a shallow bowl. If you are using coconut oil melt before adding so it is in liquid form.
Heat a pan over medium heat and spray with nonstick spray or add butter.
Place a slice of bread into the egg mixture, then flip over so that both sides have absorbed the mixture.
Put the bread into the pan and cook for 2-3 minutes per side until golden brown. Serve with maple syrup.
