Chicken poppyseed is the holy grail of casseroles. Shredded chicken breast is baked in a creamy sauce and topped with buttery crackers and poppyseeds to make one of the yummiest dinners of all time! You will please anyone with this meal and is sure to become a favorite.I have been eating this stuff since I was born. It has always been one of me and my siblings favorite meals our mom would make for us. We often requested this as our birthday dinner meals because we loved it so much. But chicken poppyseed is so simple to make, you can enjoy it any night of the week. It's comforting and delicious and always hits the spot.I always thought I was the only one who knew about chicken poppyseed until I went to college. Our sorority dinner one night was chicken poppyseed and I was mind blown! Other people knew about chicken poppyseed? I grew up eating all the southern casseroles and meals like chicken poppyseed, so I was excited to see that other people enjoyed this meal as much as I did. Now I know a lot of people love chicken poppyseed and that makes me happy. If you haven't tried it yet, here is the easy, OG recipe of one of the best chicken dinners you can ever make.

What you need:

  • Shredded Chicken Breast

  • Cream of Chicken Soup

  • Sour Cream

  • Butter

  • Butter Crackers (like Ritz)

  • Poppyseeds

What to do:

Chicken poppyseed is as easy as can be. Just mix the chicken, cream of chicken and sour cream together and put it all in a baking dish. Then mix together the crushed crackers, butter and poppyseeds and sprinkle that mixture all over the top. It gets baked and then you can serve it with rice!Yes it's that easy with only that many ingredients to make a one of a kind dinner. Chicken Poppyseed

Shredded chicken baked in a creamy sauce topped with a buttery cracker and poppyseed crumble.

  • 1.5 lb cooked chicken breast, shredded

  • 1 tsp salt

  • 1/2 tsp pepper

  • 1 can of cream of chicken soup

  • 1 cup sour cream

  • 1 sleeve of buttery crackers, crushed (like Ritz)

  • 1 tbsp poppyseeds

  • 4 tbsp melted butter

  1. Preheat an oven to 350 degrees. Spray a baking dish with non stick spray.

  2. In the baking dish, mix together the shredded chicken, salt, pepper, cream of chicken soup and sour cream until well combined.

  3. In a small bowl, mix together the crushed crackers, melted butter and poppyseeds. Sprinkle evenly all over the top of the chicken.

  4. Bake for 25-30 minutes until bubbly. Serve over rice.
