Buffalo chicken, blue cheese, cheddar cheese, covered nachos baked in the oven and topped with carrots, celery and green onion. Every bite is a good bite.I save time on game day by buying a rotisserie chicken and removing the meat. Then I toss it in my favorite buffalo sauce and top my tortilla chips with the chicken and cheeses. Like always, shred your own cheese! It melts way better than the pre shredded kind.It only takes 10 minutes in the oven! Quickest and tastiest game day meal.

Buffalo Chicken Nachos

Buffalo chicken, blue cheese and cheddar cheese covered nachos baked in the oven.

  • 1 rotisserie chicken

  • 16 oz bag of tortilla chips

  • 1/2 cup buffalo wing sauce

  • 1 1/2 cup shredded cheese (cheddar and monterey jack work great)

  • 1/2 cup cumbled blue cheese

  • chopped carrots

  • thinly sliced celery

  • sliced green onion

  1. Preheat oven to 375 degrees. Remove and shred the chicken from the rotisserie chicken. Toss with the buffalo sauce.

  2. Spray a baking sheet with non stick spray and evenly spread the chips out. Cover with the chicken, blue cheese, and shredded cheese. Bake for 10 minutes until cheese is melted.

  3. Top the nachos with the carrots, celery and green onion. Add more buffalo sauce and blue cheese if you would like.
