Egg Roll in a Bowl
Cabbage and ground pork come together with asian flavors to create this low carb meal.Egg roll in a bowl, or "undone egg roll," is basically the insides of an egg roll without the egg roll wrapper or frying. So, it's a nice low carb and keto meal to make for lunch or dinner. It's super quick to make.
What you need:
Ground protein. Pork is used most common in this dish, but I have used ground turkey and its great. Ground chicken would be tasty as well. Whatever meat you would like to use, just make sure it's plain.
Cole slaw mix. You could buy a whole cabbage and chop it up, but I find it way easier to buy a bag. The mixes also come with more veggies included like carrots, purple cabbage or broccoli.
Garlic and ginger. Best friends when it comes to cooking and asian flavors. I buy fresh ginger and grate it with a zester. Use the back of a spoon or butter knife to scrape the skin off.
Soy sauce and sesame oil. Two other basic ingredients to create an asian flavor.
Eggs. Scrambled eggs because its egg roll in a bowl.. and more protein!
Toppings. Green onion and toasted sesame seeds.
Then you just cook everything in the same pan!I love to eat this for lunch because it's filling and low carb. I also love to put some on a tostada with avocado. Just adding some rice with it is also a great idea.Hope you all enjoy this one!
Egg Roll in a Bowl
Cabbage and pork stir fry.
2 tbsp olive oil
1/2 onion, diced
1 tsp grated ginger
2 garlice cloves minced
1 lb ground pork (or turkey/chicken)
10 oz bag of cole slaw mix
1/4 cup soy sauce
2 tbsp sesame oil
2 eggs
chopped green onions
toasted sesame seeds
Heat the olive oil in a pan over medium heat. Add the onion, garlic and ginger and cook for 2-3 minutes. Add the ground meat, salt and pepper.
While the meat is cooking, scramble the eggs and add them once the meat is cooked.
Add the cabbage mix, soy sauce and sesame oil. Cook for 3-4 more minutes. Garnish with green onion and sesame seeds.
