Finally wrote a recipe down for my chicken fried rice! Just a few ingredients away from a fast and easy chicken fried rice.I love making fried rice because I can make it in less than 30 minutes and its full of pantry items. You can always customize it to whatever veggies or proteins you have on hand, but as long as you have rice and soy sauce you're good to go!

What I use:

  • Rice: Must be leftover rice or rice from the packets/frozen rice. You don't want to use fresh rice you just made because it will have too much moisture in it and get mushy. I've found that the frozen rice packets or microwave packets are good when you don't have any leftover rice.

  • Chicken: Slice it super thin so it cooks quickly and gets a little crispy on the outside. You can omit the chicken or use another protein.

  • Eggs: Is it fried rice without scrambled eggs?? Idk, but I love eggs so I always include them.

  • Veggies: I like to use frozen peas and carrots and just throw them in. Super easy and traditional. Broccoli, bell peppers or any other veggie you want will be good.

  • Soy sauce and sesame oil: Essential to fried rice and building the flavor.

  • Green onions: I can't eat fried rice without green onions. I use plenty of onions too so if you don't have green onions it's okay!

What to do:

So easy! Cook up your chicken first. Set aside and add plenty of oil in your pan to heat up. Saute the onion and garlic until translucent. Add the rice and cook alone for about 5 minutes. Then add the chicken and the veggies. Move the rice to the side and scramble the eggs. Add the soy sauce and sesame oil and lastly plenty of green onion.I hope you guys like this chicken fried rice recipe and start making it yourself instead of getting takeout!

Chicken Fried Rice

Traditional fried rice with chicken, eggs and vegetables.

  • 1-2 chicken breast, sliced thin

  • 1 tbsp oil

  • 1/2 medium onion, diced

  • 2 garlic cloves, minced

  • 2-3 cups cooked rice (best to use old )

  • 1 cup frozen peas and carrots

  • 2-3 eggs

  • 1/3 cup soy sauce

  • 2 tbsp sesame oil

  • 2 green onions, chopped

  • toasted sesame seeds

  1. In a pan over medium heat, heat up 1 tbsp oil. Cook the chicken until fully cooked, 6-7 minutes, and remove from pan. In the same pan add the rest of the oil over medium high heat. Add the rice and cook for 5 minutes.

  2. Add the chicken and vegetables, stir everything together. Move the rice to the side and scramble the eggs (or scramble in separate pan and add the eggs). Stir everything together and add the soy sauce, sesame oil and green onion. Garnish with more green onion and toasted sesame seeds.
