Avocado Chickpea Salad

Chickpeas and diced avocados are the star of this salad accompanied by tomatoes, cucumbers and red onions. Then the salad is tossed in citrus, olive oil, vinegar and parsley. All of the ingredients balance each other out so nicely. The citrus also keeps the avocados from browning, so it will last in the fridge for next day's lunch.
I like to serve this over a piece of toast for an upgraded avocado toast. You could opt to eat his as is or with some tortilla chips, too. Whatever way you want to eat this beauty!
Avocado Chickpea Salad
Avocado and chickpea salad with cucumbers, tomatoes and red onions.
1 can chickpeas, drained and rinsed
1 1/2 - 2 avocados, diced
1/2 cup cucumber, diced
1/4 cup grape tomatoes, quartered
1/4 cup red onion, sliced thin
3 tbsp olive oil
1 tbsp red wine vinegar
1/2 lemon
1/2 lime
1 tsp salt
1/4 tsp pepper
parsly
Combine all ingredients into a bowl and toss until combined. Store in air tight container in the fridge.
